COOKING STONE CRAB

Freshly caught Crab Claws are called "Green" and have a green appearance prior to cooking.

PREPARING THE CLAWS:

First, the claws are dumped into the stainless steel
cooking baskets. The basket of claws is hoisted up and lowered into the rinse tank.

COOKING THE CLAWS:

Immediately after being rinsed, the claws are hoisted up again and then carefully lowered into the boiling tank.
*The temperature we recommend is 212-225 degrees
and cooking time of 8-10 minutes.

*NOTE: The average weight for our recommended time and temperature is

100lbs. The more weight in the basket, the longer the cooking time.

Once the 8-10 minutes are complete, the bright colored
claws are cooked to perfection and are hoisted up and immediately lowered into the ice cold chilling tank where the claws will cool for 8-12 minutes.  This also stops the cooking process.

After the 8-12 minute ice cold bath, the claws are then
removed from the chill tank and are ready for sorting and grading.

 

Repeat this process for each batch you cook!
